Raspberry Choc Bliss Balls

25 dates

1/2 - 1 cup almond meal

1 tbsp chia seeds

1 tbsp tahini

1/4-1/2 cup cocoa powder

2 crushed raspberries - plus 1 whole one for the middle

coconut threads

Soak dates overnight in hot water.  The following day, drain them.

Put dates, almond meal, chia seeds, tahini in food processor & combine.

Add cocoa powder and crushed raspberries.

You may need more almond meal if too wet - or if to dry, add some of the drained date juice.  Add as your tastebuds desire -more cocoa powder?  maybe freezedried raspberries instead? some other nuts?  maybe you want a bit of Stevia to sweeten them?

Roll into bitesize balls with a whole raspberry in the middle, and then roll in coconut threads.  I added pink food colouring to the coconut to distinguish them from the other flavours I made.  Look pretty nice too.

These are great to freeze, and I actually thiink they taste better straight from the freezer.
